Meet Mary–MAD Wine Bar’s Sommelier & Co-Founder

If you’ve been to MAD Wine Bar, you’ve likely been welcomed with a big smile and expert wine advice from Mary — our house sommelier and partner.

Mary joined the MAD family more than 10 years ago, starting as restaurant manager at
MAD House. Casper and Camilla quickly saw her talent and energy, and when
MAD Wine Bar & Eatery opened in 2019, Mary became a partner.

Her love for wine has grown into a deep passion, backed by serious training and awards.

Meet Camilla – MAD Wine Bar’s
Creative mind & Co-Founder

Camilla has always found her place in the kitchen. Her journey started in 2009 at
Henne Kirkeby Kro in Denmark, working alongside Casper.
In the winters, she trained in Michelin-starred kitchens in Copenhagen
including AOC (2 stars) and Geranium (3 stars)

In 2012, she moved to Vietnam to join Casper, and in 2015 they launched MAD House, the first chapter of what would become the MAD brand.

Today, Camilla runs her own counter kitchen at MAD Wine Bar & Eatery, creating menus inspired by her travels through Vietnam and beyond — always rooted in honest, simple, joyful food.

Creative, curious, and full of energy — Camilla is the heart of MAD

Meet Casper – Wine Director, Co-Founder

Casper’s journey started in Denmark in 2004. He trained under Michelin-starred chef
Michel Michaud at Ruth’s Hotel, and by 21, became head chef and hotel director at a boutique property on the island of Læsø.

His career took off when he joined Henne Kirkeby Kro, which was later voted the best restaurant in Denmark and the Nordics in 2011/2012.

In 2012, Casper moved to Vietnam to become head chef at Chill Sky Bar, one of Saigon’s most iconic venues. He and Camilla opened MAD House in 2015
and then MAD Wine Bar & Eatery in 2019.

Casper now curates our wine list, hosts events, and keeps the MAD energy alive.
